Sautéed Peas with Honey and Feta

Serves 4 to 6

2 can (15 oz., 425g) Libby’s® Sweet Peas
1 tbsp butter
1⁄2 lb feta cheese
1 clv minced garlic
2 tbsp fresh lemon juice
1 tsp honey
5 tbsp olive oil
1 tbsp chopped parsley
1⁄4 c walnuts

Combine garlic, lemon juice and honey in small bowl and whisk. Continue to whisk while slowly adding the olive oil. Add salt and pepper.

Place butter in sauté pan and add Libby’s® Sweet Peas. Stir until peas are coated with butter, about 2 minutes. Place peas in bowl and lightly season with salt and pepper. Toss peas gently with salad dressing and then add feta, chopped herbs and walnuts.
