1 can (15 oz., 425g) Libby’s® Whole Kernel Sweet Corn
1 can (15 oz., 425g) black beans
1 1⁄2 lb lean ground beef
2 clv garlic (minced)
1 pkg taco seasoning mix
1 c jarred salsa
2 c low sodium beef broth
8 oz rotini
1 c Mexican blend shredded cheese
optional toppings (sour cream, salsa, chopped cilantro, sliced avocado, black olives, etc.)
Brown the ground beef in large skillet over medium-high heat. Drain away excess fat.
Return meat to skillet and turn skillet to medium heat. Add garlic and cook for one minute, stirring constantly.
Add taco seasoning, salsa, drained Libby’s® Whole Kernel Sweet Corn, undrained black beans, and beef broth. Stir to combine. Bring to simmer. Add pasta and stir. Cover and cook for 15 to 20 minutes, or until pasta is tender, stirring occasionally.
Once pasta is tender, sprinkle with Mexican blend shredded cheese and replace lid. Turn heat off and allow pasta to rest for about five minutes for cheese to melt. If desired, top with chopped cilantro, sour cream, salsa, avocado, etc.
